Chicken & Veggie Pasta Bake

Ingredients

2 Large chicken breasts

1 1/2 cups penne pasta

1 cup frozen peas and corn

1 cup broccoli florets

2 jars tomato pasta sauce (either store bought or homemade).

Grated cheddar cheese to sprinkle on top

Olive Oil

Salt & Pepper to season

1.Preheat over to 180 degrees celcius and prepare an oven proof dish to cook your pasta bake in at the end.

2. Prepare a large saucepan of water and place on high heat to cook the pasta. Prepare a second smaller saucepan to cook the frozen peas/corn and brocoli.

3. Heat Olive Oil in frying pan and cook chicken for 6-7 minutes or until cooked through. Remove chicken from the frying pan

4. Shred chicken into coarse strips and set aside.

5. Your pasta water should be at a boiling point by now so add a good handful of salt to season the water and add in your pasta to cook.

6. Add the peas, corn and broccoli floats to the second smaller saucepan and cook until tender. Around 2-3 minutes.

7. Combine all cooked ingredients (chicken, pasta, and all veggies) in your ovenproof dish and stir through tomato sauce/ pasta sauce of your choice

8. Sprinkle with cheese and bake for 15-20 minutes or until the cheese has melted and it's all heathed through.
