Sweet Potato & Zucchini Slice

Ingredients

1 brown onion - finely chopped

300g sweet potato - peeled and grated

2 cloves of garlic

4 eggs

2 egg whites

1/4 cup plain flour

1/2 cup ricotta

250g zucchini - grated

1/4 cup parmesan cheese

Method

1. Preheat oven to 180 degrees celsius. Grease slice pan or line with grease proof paper.

2. Fry onion until soft, stir in grated sweet potato and garlic and cook for a further 3 to 4 minutes.

3. Whisk the eggs, egg whites and flour in a bowl until smooth.

4. Whisk in ricotta and then add the grated zucchini into the sweet potato mixture.

5. Pour the mixture into the prepared slice pan and sprinkle with parmesan cheese.

6. Bake for 25-30 minutes or until golden and completely cooked through.

*This slice is delicious with a really simple side salad of rocket and cherry tomatoes.
