Lemon & Coconut Bliss Balls

Ingredients
1 1/2 cups of cashews
1 1/2 cups desiccated coconut
1-2 lemons, seeded & juiced
1/4 cup rice malt syrup
2 tbsp coconut oil, soft
1 tsp vanilla essence
A pinch of rock salt
Method
1. Add cashews to your food processor and blitz until they are close to the texture of fine rubble.
2. Add the remainder of the ingredients and blitz until the mixture has completely combined and come together.
3. Roll mixture into balls and coat in desiccated coconut (optional).
4. Place the bliss balls in an airtight container and put them in the fridge
* These can be stored and eaten up to 5 days
